What makes this coffee unique is a process that Pola refers to as “Semi-Natural Black Honey”. 

After picking, this hybrid variety is left in sacks exposed to oxygen for 72 hours, undergoing Aerobic fermentation. After that period, the coffee is de-pulped (the cherry skin is removed) and placed on raised beds to dry with a lot of mucilage intact (referred to as black honey).
